Creole Dipping Sauce
Instructions
  1. Slice the potato in half and then cut 1/4 inch slices into wedges. (4-5 slices per half potato.)
  2. Cook the potatoes in boiling water for 5-7 minutes. Should be par cooked.
  3. Drain the potatoes and when cooled, toss with the cajun mixture.
  4. Cut the pound of bacon in half
  5. Wrap each seasoned piece of potato with 1/2 strip of bacon.
  6. Preheat oven to 375 degrees and bake wedges on a sheet pan for 15 minutes.
  7. Turn the potatoes and bacon for another 15 minutes on the other side.
  8. Serve hot!
Creole Dipping sauce
  1. Mix mayo, sour cream, ketchup and the seasoning together and place in the fridge or serve immediately.
