When most people think of the Fall season, they envision leaves turning colors, temperatures getting colder, Halloween, Thanksgiving and all things pumpkin. These are also some of my favorite Fall icons. However, when I think of Fall, I associate it with football, and delicious Italian Sunday Dinners with friends and family. The type of dinner that leaves you full, tired and so so satisfied.

There is also something very special about Sliders. The thought of them just makes people smile. Maybe it’s because they come in all different styles, flavors and they are enjoyed by people of all ages. Their size make them ideal for a child’s birthday party. Their styles and flavors make them a perfect companion for a delicious cold craft beer.  For a caterer or someone who loves to create recipes, there is so much room for creativity when making a slider.

The purposeful design of this outstanding recipe was to combine my two favorite parts of the Fall season. The pesto Italian meatball served on the homemade tomato basil brioche slider roll makes the perfect compliment to your  football party or your Sunday family dinner.

 

 

 

Party Tips

 

Making your own rolls is important for this recipe. It adds flavor and character to the sandwich which a store bought slider roll cannot provide. Your guests will appreciate it!

 

These sliders will do great if you put tin foil on top of them. The meatballs will stay moist and the bread soft from the heat of the food.

 

Have a squeeze bottle of pesto handy to refresh the meatballs right before serving them.

Instructions
Tomato Basil Brioche Bun
  1. 1. In a glass measuring cup, combine one cup warm water, the milk, yeast and sugar. Stir and let it stand until it builds a head and gets foamy. (5-10 minutes)
  2. In a mixing bowl, combine the flour, salt and butter and mix on a low setting using a dough hook.
  3. While on a low setting, add tomato and basil to the dough mixture and continue to mix on a low setting.
  4. When the yeast mixture is ready, add it to the dough as well as 1 beaten egg. Turn the mixer to a medium to high setting until all the ingredients combine. The dough should be a bit sticky but holding its form.
  5. Put dough in a bowl and cover. Place in the refrigerator for at least 2 hours.
  6. Roll dough into small balls about place in a greased muffin pan. The dough should only take up 1/3 size of a regular size pan.
  7. Brush each dough ball with an egg wash and sprinkle the diced garlic on the top.
  8. Bake in a preheated 375 degree over for 17-18 minutes. Let cool and slice down the middle to complete the slider roll.
Pesto Sauce
  1. Place basil leaves, walnuts or pine nuts, oil, garlic, parmesan cheese and pepper in a food processor and pulse until well blended.
  2. Leave out at room temperature until meatballs are finished cooking.
Meatballs
  1. Combine ground beef, Parmesan cheese, and eggs in a medium size bowl
  2. Combine 1/2 loaf of french bread or Italian bread (Store bought bread crumbs would work as well), garlic, and pulse in a food processor.
  3. combine bread crumb mixture with ground beef mixture
  4. roll into 2 ounce meatballs and bake in the oven for 30 minutes at 350 degrees.
  5. When meatballs are cooked, roll them in the pesto sauce and serve them immediately on the tomato basil brioche bun.
